Mushroom Sesame Quinoa with Scallions
I know, I know, my last recipe was an Asian sesame quinoa dish too. But, that was a delicious, salad-y dish…and this is a delicious, warm side dish.
Ya know, I wanna call January ‘National Quinoa Month’ because, I swear, that little protein-packed grain couldn’t be more popular than it is in January. It’s like the perfect, healthy chaser to the holiday food extravaganza. In the spirit of all that, I am stooooked to give you my recipe for Mushroom Sesame Quinoa with Scallions.
Here’s what I love about this recipe:
- It’s vegan…and gluten-free!
- It’s 6 easy-to-handle ingredients
- Quinoa has about 8 grams protein per cup. Yes!
- This recipe comes together in 20 minutes.
- It has a lot of scallions/green onions (they’re the same thing)
- Makes a perfect lunch or day trip snack…super portable.
- It the perfect side dish that can double as a dinner entrée.
- It’s perfect for any occasion and any season of the year.
Back in my college days, I worked as a bread-baker and deli manager at The Neighborhood Co-op in Carbondale, IL. It was a natural food store with a giant bulk section…still is.
This is where I acquired my training wheels in the natural foods industry. It’s also the first place I tested some of my original recipes on people other than my friends. That was awesome!
This time period was a constant identity crisis for me, though…the classroom and the kitchen constantly competed for my attention. But, the kitchen won me, as I pursued my undergraduate education on a part-time basis…with no regrets. Eventually, I would leave the kitchen to pursue a full-time graduate degree in Communication Studies…with no regrets. And now I’m back in the kitchen, baby!
Looking back, I’ve always felt so fortunate to have discovered my passion for this niche so early in life. Here’s a throwback of me and one of my food partners in crime, Kris. We tore that kitchen up with some killa tunes, sweet vibes, awesome co-workers, and gooooooood food!
What’s this have to do with my quinoa recipe? Well, this era (mid 90’s) was my first introduction to quinoa…and I didn’t love it…at all. I couldn’t find anything I liked about it. Oh, except for one product made by Elizabeth on our kitchen crew…it was Quinoa Bread. And it was pretty good as I recall, but I still wasn’t throwing down on steamed quinoa as a side dish.
So, I wrote it off. All the while, knowing I was missing out on a really healthy ingredient…but kinda wasn’t.
Three or four years ago, I started toying with it again…and still didn’t love it.
Enter Pinterest…I swear that platform inspires you even in your sleep!…because sometime last year, I started getting more adventurous with quinoa. And now…I’m hooked! Completely, utterly, sold! With dishes like this, who isn’t?!?!
Side note: that’s a selfie of my sexy Lodge Cast Iron Skillet in the pics. Everyone should have at least one lodge skillet in their kitchen (but I have three and I want a few more!)
There isn’t enough time in the day to experiment with quinoa to my heart’s content. But I keep trying. And, I could be wrong, but I don’t think there exists a simpler grain to prepare either. It goes like this…
- throw it into a sauce pot
- add water
- bring to a boil
- and cover and simmer for about 15 minutes
Ri.dic.u.lous.ly easy…everybody’s got time for that!
