    Easy Sautéed Asparagus

    Sautéed asparagus is a simple vegetable side dish that's ready in minutes and uses minimal olive oil. It’s perfectly tender, flavorful, and completes almost any entree. Great for snacking too!

    A Note From My Test Kitchen

    Sautéed asparagus is one of the quickest and easiest vegetable side dishes you can make, and a few simple techniques make it irresistible. After testing batch sizes, pan heat, and cook times, I found that you only need a hot skillet and a very light coating of oil. Then, keeping the asparagus in a single layer ensures it is perfectly sautéed, with lightly crisped edges and tender centers.

    Every time I make it, I have a hard time not eating it straight from the pan with its tender-crisp texture and lightly browned edges. My favorite way to enjoy sautéed asparagus is with a drizzle of green goddess dressing alongside juicy broiled salmon. It feels healthy, fresh, simple, and satisfying. I also love it with egg salad for breakfast.

    • Asparagus - The star of the show is fresh asparagus. Any size will work, just follow the times indicated in the recipe instructions to ensure you cook yours to perfection.
    • Extra virgin olive oil - A light coating of oil helps the asparagus sauté instead of steaming while adding flavor and helping the edges lightly crisp in the skillet.
    • Salt and black pepper - Asparagus has a lot of flavor on its own, but a pinch of salt and pepper brings out even more savory flavor.
    • Optional additions - Fresh garlic, butter, lemon zest, Parmesan cheese, or balsamic glaze are easy ways to change up this recipe.

    How to Sauté Asparagus

    After rinsing the asparagus, towel-dry it very well. Wet asparagus steams instead of sautés, which prevents lightly crisped edges and vibrant green color. After that, trim the woody ends, heat a skillet until hot, add oil, arrange the asparagus in a single layer, and let it cook for a few minutes.

    Turn or shake the skillet often to keep the asparagus moving as it cooks. I like to use tongs to quickly move small groupings around the pan. The asparagus is ready when it’s bright green with tender centers, lightly browned edges, and has a slight bend when you lift it.

    How Long to Sauté Asparagus

    The exact cook time depends on how thick the asparagus spears are and how tender you like them. Thin asparagus cooks very quickly, while thicker asparagus needs a few extra minutes to become tender.

    • Thin asparagus (¼-inch thick) – 3–5 minutes
    • Medium asparagus (⅓-inch thick) – 5–7 minutes
    • Thick asparagus (½-inch thick) – 7–9 minutes

    The asparagus is ready when it becomes bright green with lightly browned edges and tender centers that still have a slight bite.

    Recipe Tips

    • Any skillet works – You can use stainless steel, cast iron, or nonstick for this recipe as long as the pan is hot and the asparagus stays in a single layer.
    • Minimize hot oil splattering – After rinsing the asparagus, towel-dry or air-dry it completely to remove excess surface moisture before sautéing.
    • How to trim asparagus – Cut off the bottom 1–2 inches where the stalks are tough, or snap one spear and use it as a guide.
    • Whole or cut asparagus – You can leave the asparagus spears whole or cut them into bite-sized pieces before sautéing. This is mostly a matter of personal preference, but smaller pieces may cook a little faster.
    • Butter option – Stir in a small pat of butter at the end for extra richness and flavor.

    Note about scaling

    When scaling, the light gray ingredient notes after the comma don’t change. Adjust as needed.

    Ingredients 

    • ½ pound Fresh Asparagus, trimmed, rinsed, and patted dry
    • 2 teaspoons Extra Virgin Olive Oil, or more as desired
    • pinch Salt and Black Pepper
    • 1 Lemon, optional

    Instructions

    • Heat a skillet over medium-high heat until hot. Do the water drop test by sprinkling a few drops of water into the pan. If they bead and move around, the skillet is ready.
    • Add the OLIVE OIL and heat until shimmering.
    • Add ASPARAGUS to the hot skillet in a single layer and shake or use tongs to move it around in the pan until it's coated in oil.
    • Continue cooking, turning occasionally, until bright green and tender-crisp. Use these cook times as a guide:
      Thin spears: 3–5 minutes
      Medium spears: 5–7 minutes
      Thick spears: 7–9 minutes
    • Season with SALT and BLACK PEPPER, the zest of a LEMON, then serve warm with a lemon wedge, drizzling any remaining oil from the pan over the plate.
    • To store, cool completely, then refrigerate in an airtight container for up to 3 days.
