How to Bake Chicken Thighs

First, pat the chicken completely dry with paper towels. Then place the thighs, skin-side up, in an oven-safe dish. Brush the skin lightly with olive oil, then add the seasonings. If you have time, let the thighs rest at room temperature for about 20 minutes to meld the flavors and bake them more evenly.


Next, bake the chicken thighs at 400°F for 30–45 minutes, depending on their size. They’re fully cooked at 165°F, but baking them a little longer helps the fat render and the skin crisp. If you want to speed up the crisping, switch to the broiler for 1–2 minutes and watch closely because they brown quickly.


Let the thighs rest for a few minutes before serving. That’s it. No marinating, no complicated steps, and no hovering over a stove.

Ingredients
- 5 Bone-In Chicken Thighs, or more as needed
- 1 teaspoon Olive Oil, or oil spray
- Salt and Black Pepper, for seasoning
- ⅛ teaspoon Garlic Powder, or measure with your heart
- ⅛ teaspoon Paprika, or measure with your heart
Instructions
- Preheat your oven to 400°F and center the oven rack. Pat the CHICKEN THIGHS dry with a paper towel. Place the thighs in an oven-safe dish or baking sheet, skin side up.
- Brush OLIVE OIL over the skin. Generously season with SALT and PEPPER, then sprinkle GARLIC POWDER and PAPRIKA evenly on top.
- If you have time, let the CHICKEN rest at room temperature for 20 minutes before baking to let flavors meld and promote even cooking. Otherwise, skip to the next step.
- Bake the chicken thighs uncovered for 30–45 minutes, depending on their size. They’re fully cooked at 165°F, but baking them a little longer helps the fat render and the skin crisp. You can also broil them for a few minutes to speed up crisping, watching closely because the skin browns quickly.
- Transfer the cooked thighs to a loosely covered plate and let them rest 5 minutes before serving.
- Cool leftovers completely. Refrigerate in an airtight container up to 5 days.

This recipe is just about as easy as they come! I added just a little bit of cayenne pepper to the seasoning to add a hint of heat to the flavor and it was great. I also broiled the skin on high for about 2-3 minutes, then flipped the thighs and broiled the bottom side for 3-4 minutes to crisp it all around. I will make this again - it's SOOOO easy! 🙂
