    Garlicky Roasted Mushrooms are a juicy, delectable side dish for any cooking skill level. These oven roasted mushrooms will complete any meal with only 5-minute prep and 10-minute bake time. They're also approved for most diets, making them pretty much 'miracle food'.

    Garlicky Oven Roasted Mushrooms

    My favorite thing about this roasted mushroom recipe is how much flavor you get from so few ingredients and such simple steps. Oven roasted mushrooms generally need much less oil than stove sautéed mushrooms. In the oven, they baste in their natural juices, so you only need a light coating of oil, and they always come out perfectly tender and juicy, just like my oven roasted cherry tomatoes.

    What's the difference between roasted mushrooms and baked mushrooms?

    The words baked and roasted are often interchangeably used, but they technically have two meanings. Both methods refer to a dry-heat source in the oven, and The Kitchn explains how the temperature for roasting is actually higher than for baking, which results in a browned-exterior with moist interior. Which also means YUMMM!

    • take 5 minutes to prep and about 10 minutes to bake
    • require only a light coating of oil to bake, unlike sautéing

    Roasted mushroom recipe steps

    1. Preheat oven to 400°.
    2. Add mushrooms to bowl with olive oil, fresh garlic, fresh chives, salt, and pepper.
    3. Toss to combine (you want the garlic to stick to the mushrooms).
    4. Place on baking sheet and dust mushrooms with garlic powder.
    5. Bake 10-12 minutes until sizzling. Serve warm.

    Oven roasted mushrooms can be baked in conventional oven or countertop oven. They're perfect for any occasion and require minimal cooking skills. I'm sure you'll find them positively scrumptious, so make plenty!

    Garlicky Oven Roasted Mushrooms

    Note about scaling

    When scaling, the light gray ingredient notes after the comma don’t change. Adjust as needed.

    Ingredients 

    • 1 pound Mushrooms, wiped clean, stems trimmed
    • 1 tablespoon Extra Virgin Olive Oil, or any cooking oil
    • 2 cloves Garlic, minced
    • 2 tablespoons Fresh Chives, chopped (or 1 teaspoon dried)
    • ⅛ teaspoon Sea Salt
    • ⅛ teaspoon Black Pepper
    • ⅛ teaspoon Garlic Powder

    Instructions

    • Preheat oven to 400°F.
    • Place MUSHROOMS in a mixing bowl with OLIVE OIL, GARLIC, CHIVES, SALT, and PEPPER. Toss gently to coat.
    • Scatter mushrooms on a baking sheet and dust with GARLIC POWDER.
    • Bake 10 minutes, or until browned to your liking. Serve warm.
    • Once cooled, refrigerate roasted mushrooms in an airtight container up to 2 days. Reheat or enjoy chilled.

    Recipe Notes

    What kind of mushrooms can I use for this roasted mushroom recipe?
    I personally like to use regular white mushrooms or baby bellas for this recipe. You can roast any kind of mushroom, but you might have to adjust oven time if they're significantly larger or smaller than your everyday button mushroom.
    Can I use pre-sliced mushrooms for this recipe?
    You can, but you'll want to cut the roasting time in half because sliced mushrooms will roast more quickly than whole mushrooms.

      Could these be served chilled or at room temp alongside other pre-roasted veggies?

        Hi Colleen, roasted mushrooms can be served at any temperature, observing food safety best practices, of course. The general rule is to ensure that perishable foods are not kept at room temperature for more than two hours. This helps prevent the growth of harmful bacteria. Hope that answers your question.         Yes! Just follow the recipe instructions for storage and then reheat on a medium heat setting using your favorite appliance until warmed through (microwave, air fryer, oven). Thank and enjoy!

      I’ve made these twice before. Every time I do, the only complaint I get is that I didn’t make enough! 1 lb of creminis is about 4 per person when you’re serving 3 adults. They are absolutely scrumptious and fill of flavor. And I love how easy and quick they are to make.

      Hello! I was just wondering if roasted mushrooms release water as they do(and a lot of it) when I try to sauté them. I'm trying to cook them healthy. Grilling and microwaving them are the options given, but I don't like either! Roasting them appears to be a good alternative to cooking healthy!

        Hi Jo, I'm not sure, actually. I can't say that roasted mushrooms releases more or less water than sauteing. I just know they're super juicy when they come out of the oven. Perfectly juicy LOL. Let me know if you make them!

      I made these for the first time to serve with Prime Rib Roast for Christmas dinner, and they were fantastic! Just the right balance of flavors. They complimented the meat to a "T" and were a big hit. May have been the first time making them, but not the last.

      I followed the recipe and the mushrooms turned out very nice. Only, I baked for a little longer with the lid on and I did put more garlic on the mushrooms. I liked that they are very healthy, almost no oil and low in calories in carbohydrates, but not at the expense of flavour.
