Prosciutto Tater Tot Avocado Breakfast Bake
The day after Thanksgiving, I wanted a breakfast casserole that was on the indulgent side – because holidays, right? So, I collected a handful of ingredients from my fridge, many of which I don’t usually have on hand (like frozen tater tots and Prosciutto di Parma). I proceeded to accidentally create our (new favorite) breakfast. The one we’ll probably treat ourselves to at least once a month.
I call this recipe an accident because it wasn’t totally thought out and was 10 times better than I anticipated. I realize you can’t go wrong with the flavor combination of prosciutto, tater tots, avocado, eggs, and cheddar, but I honestly didn’t know if the texture would be a hit…or a miss.
It was a hit…straight outta the park! Guys…this is the breakfast bake to make any weekend of the year! It’s mostly hands-free, ready in 30, gluten free, and requires the most basic cooking skills, such as heating an oven and carefully shoving stuff in and out of the oven a few times. That’s really it!
Here are the easy steps to get Prosciutto Tater Tot Avocado Breakfast Bake on the table in 30 minutes:
- bake the tater tots
- prep ingredients (while tots bake)
- throw everything into casserole dish
- bake 12-15 minutes…and eat!
Here are the (only eight) ingredients you’ll need for this recipe:
- frozen tater tots
- Prosciutto Di Parma (the perfect bacon substitute!)
- sharp cheddar
- green onions

- canola oil no-stick cooking spray
- Microplane extra coarse grater
- baker’s 1/4 sheet
- baking dish (10.5 x 7)
- non-slip silicone oven mitt
- pancake turner
