How to make corned beef brisket hash
You won't believe how easy it is to make homemade corned beef hash! It's a simple as heating butter in a skillet and sautéing potatoes and onions until they are fork tender. Then, add leftover corned beef to the skillet and continue heating until warmed through. Add black pepper to taste, garnish with parsley, and serve warm.

Corned beef hash for breakfast
This is the most popular way to serve brisket hash. To make corned beef hash with eggs, preheat oven to 400°F. Follow the corned beef hash recipe (below), then crack eggs over the hash. Bake 8-12 minutes, or until desired egg firmness is reached. Remove, test egg whites and yolk for desired texture, and allow to rest a few minutes.
Alternatively, you can serve corned beef hash with fried eggs. Just cook the corned beef hash in one skillet and fry the eggs in another at the same time. Serve the brisket hash with an egg on top and boom! Delicious!
Recipe tips
- The smaller you dice potatoes, the quicker they cook.
- If cutting potatoes ahead, soak them water to prevent discoloring. Then drain and towel-dry before sautéing.
- Don't add the corned beef to the hash skillet until the potatoes and onions are fully cooked. This prevents overcooking the corned beef and keeps it juicy and tender.
- Since corned beef is salt-cured, you may not need to add salt to this recipe. Instead, offer it on the side as an option for guests.

INGREDIENTS
- 3 tablespoon Unsalted Butter
- ½ large Onion, diced (about 1 cup)
- 2 large Russet Potatoes, diced (about 4 cups or 1 lb.)
- 2 cups Cooked Corned Beef, chopped (about ½ lb)
- Black Pepper, to taste
- ¼ cup Parsley, chopped
Instructions
- Heat BUTTER in large skillet over medium high heat.
- Add ONION and saute until tender, stirring as needed.
- Add POTATOES and saute until fork tender, stirring as needed.
- Stir in CORNED BEEF and continue heating until warmed through.
- Add BLACK PEPPER, top with PARSLEY, and serve warm.
- To store, allow to cool and refrigerate in an airtight container up to 5 days.
