My friend, Jane Bonacci, co-author of the cookbook, invited me to participate in the launch by featuring this recipe from the cookbook. But, you don’t have to be gluten free to enjoy this recipe…use any pasta you like!
Instant Pot Shrimp Pasta in Lemon Cream Sauce
The electric pressure cooker strikes again!
Here’s a recipe where we can skip the stovetop, yet manage to sauté shrimp, boil pasta, and finish everything in a cream sauce…sequentially, in ONE pot…our beloved Instant Pot.
Now, I don’t typically use the Instant Pot for a 3-component pasta recipe, but do use it to cook the pasta while I prepare other components on the stove.
So, test-driving this shrimp pasta recipe as a “one pot” method for the launch of my friend’s’ Gluten Free Instant Pot Cookbook was a must-do activity!
What pasta did I use?
I’m NOT gluten restricted and I usually prefer conventional pasta. But, for this recipe, I test drove a gluten free penne noodle for fun…and to keep with the gluten free cookbook theme.
I used Ancient Harvest Penne (not sponsored), which is readily available on Amazon, if not through your local grocer.
The shrimp and lemon cream sauce were delicious, as anticipated. The penne noodles were, as my other half said, “surprisingly good for being gluten free!”
We found them to be very tasty and the texture wasn’t gritty or weird.
Although, they did fall apart on me a little while styling these photos, but I noodled my way through it 😉
Just know, gf pasta can be more delicate than your everyday, semolina penne noodle.

Instant Pot Shrimp Pasta Recipe Overview

Step 1: Pressure cook the pasta noodles in water in the Instant Pot; drain, and set aside.
Step 2: Cook shrimp and shallot in the Instant Pot using “sauté” function; remove and set aside.
Step 3: Make lemon cream in the Instant Pot using “sauté” function.
Step 4: Combine cooked pasta and cooked shrimp with the lemon cream sauce in the Instant Pot. Heat until warm; serve immediately.

- penne pasta noodles
- extra virgin olive oil
- shallot (or onion)
- raw shrimp
- fresh dill (or dried)
- heavy cream
- fresh garlic
- parmesan cheese
- salt and pepper

- microplane zester (to zest lemon & finely grate garlic)
- 6 quart Instant Pot
- skimmer slotted spoon (to stir/remove shrimp from Instant Pot)
