Banh mi sliders are the party version of a Vietnamese classic. Sliced chicken, pickled veggies, and banh mi toppings are piled on a slider roll and ready to devour!
Why we love banh mi sliders
Banh mi chicken sliders are the party version of a classic Vietnamese sandwich only they're made with slider buns, which puts a unique spin a sandwich classic.
These sliders are made with marinated chicken, pickled carrots and daikon, mayo, sriracha, cilantro, and jalapeno. This flavor combination makes it sweet, salty, spicy, sour, and savory, so it hits all corners of the palate.
Ingredient notes
- chicken marinade - This is a quick combination of soy sauce, fish sauce, lime, garlic, and sugar.
- chicken breast - This recipe includes instructions for sauteed chicken breast and includes a link for air frying instructions. Also, chicken thighs can be used in place of breast using the same recipe instructions.
- slider rolls - can be substituted with a French baguette for a more traditional sandwich
- mayonnaise
- pickled carrots and daikon - These are a staple condiment on Vietnamese sandwiches.
- sliced cucumber - Optional but recommended.
- fresh cilantro and jalapeno - These are standard banh mi topping ingredients.
- Sriracha sauce - Another key ingredient that adds spicy flavor.
How to make banh mi sliders
You'll find the full, printable recipe below. These are the abbreviated instructions.
- Use a meat mallet to pound the chicken into even thickness. Then combine marinade ingredients and marinate the chicken for 30 minutes or up to 8 hours.
- Cook the chicken using saute method. You can also make air fried chicken breast for a non-stove option.
- Cut chicken into slices.
- Assemble the sliders.
Step 1. To assemble bahn mi sliders, spread the mayo on slider rolls, distribute chicken and pickled vegetables.
Step 2. Top with cucumbers, sliced jalapeno, and cilantro.
Step 3. Add Sriracha and top with slider bun. Serve and devour!

Chicken Banh Mi Sliders

Ingredients
- 1 pound Boneless Skinless Chicken Breast or thighs
- 1 Lime zested and juiced
- 1 tablespoon Fish Sauce
- 3 cloves Garlic grated
- 1 tablespoon Sugar
- 1 tablespoon Soy Sauce
- 1 tablespoon Canola Oil
- 9-12 Slider Rolls
- ¼ cup Mayonnaise or more as needed
- 1.5 cups Pickled Carrots and Daikon
- ¼ pound Cucumber thinly sliced
- ½ cup Fresh Cilantro loosely packed
- 1 Fresh Jalapeño Pepper sliced and seeded
- Sriracha sauce use as needed
Equipment
- meat mallet
- 10-inch skillet
Instructions
- Use meat mallet to pound CHICKEN BREAST to an even thickness. Set aside briefly.
- In a mixing bowl, whisk together LIME JUICE, FISH SAUCE, GARLIC, SUGAR, and SOY SAUCE until combined.
- Place chicken in this mixture, turning to coat. Cover, and rest 30 minutes up to 8 hours.
- Heat OIL in skillet over medium-high heat.
- Transfer CHICKEN BREAST to skillet and saute about 3 minutes, or until it releases from the pan without effort.Note: Add some of the marinade to the skillet with the chicken or discard it.
- Flip chicken breast and continue sauteing until it reaches a safe internal temperature of 165 degrees Fahrenheit.
- Use clean tongs to transfer chicken to a covered plate and rest 5 minutes.
- Before assembly, slice chicken against the grain into thin strips and keep warm.
- To assemble, prepare SLIDER ROLLS. You can either A) cut now into individual sliders or B) keep slider rolls attached to each other and make the sliders in bulk (then cut before serving)
- Separate the top portion of rolls and spread MAYONNAISE on inside surface of the rolls.
- Distribute ingredients evenly over the rolls from the bottom up: CHICKEN, PICKLED VEGETABLES, CUCUMBER, CILANTRO, JALAPEÑOS, and SRIRACHA.
- Cover the rolls (cut if needed, insert sandwich toothpicks, and serve warm.
