    What is corned beef hash?

    It's a popular breakfast dish made with cooked corned beef, potatoes, and onions, all sauteed until tender with crispy edges. It's often served for St. Patrick's Day breakfast or brunch, but can also be enjoyed beyond the holiday using leftover Crockpot corned beef dinner or pressure cooker corned beef. Corned beef hash with eggs elevates this skillet entree to another level of deliciousness.

    • Onion - Any variety will work for this recipe.
    • Potatoes - Use cooked potatoes for convenience. You can use raw potatoes, but they naturally take longer to cook.
    • Corned beef - You'll need fully cooked corned beef for this recipe. Leftover corned beef or freshly sliced corned beef from your local deli are equally fitting for this recipe.
    • Fresh parsley - This adds a pop of green color, which is fitting for this St. Pat's holiday-inspired dish.
    • Eggs - Add a fried egg to corned beef hash for the ultimate comfort breakfast.

    How to cook corned beef hash

    Step 1. Heat butter in large skillet over medium-high heat. Add onions and saute until tender and golden brown, stirring as needed. Add potatoes and saute until browned and crispy, stirring as needed.

    Step 2. Stir in cooked corned beef and continue heating until warmed through with crispy edges. Season with black pepper. Serve warm garnished with parsley and (optional) top with a fried egg.

    Recipe tips

    • When using raw potatoes, prevent discoloring by soaking them in cold water after chopping. Just be sure to drain thoroughly before sautéing.
    • Since this recipe uses fully cooked corned beef, be careful not to overcook it, which keeps it juicy and tender for skillet hash.
    • Add a handful of chopped carrots, celery, or bell peppers while the onions are sauteing for or even more flavor, texture, and nutrition.
    • Corned beef is naturally salty, so this recipe doesn't call for salt. Of course, you can add salt to taste if desired.
    • Is this recipe gluten free? It is as long as you use certified gluten free corned beef.

    Note about scaling

    When scaling (2x or 3x), the light gray ingredient amount doesn’t scale. Please adjust those accordingly.

    Ingredients 

    • 2 tablespoons Unsalted Butter, or olive oil
    • ½ large Onion, diced
    • 3 cups Cooked Potatoes, diced
    • 2 cups Cooked Corned Beef, chopped
    • Black Pepper, to taste
    • 2 tablespoons Fresh Parsley, chopped
    • Poached or Fried Eggs, optional

    Instructions

    • Heat BUTTER in skillet over medium heat.
    • Add ONION and saute until tender, stirring as needed.
    • Add POTATOES and saute until golden brown and crispy, stirring as needed.
    • Stir in CORNED BEEF and continue heating until warmed through with crispy edges.
    • Season with BLACK PEPPER.
    • Serve warm garnished with CHOPPED PARSLEY topped with EGGS (optional).
    • To store, allow to cool completely and refrigerate in an airtight container up to 5 days.

    Recipe Notes

    • Since this recipe uses fully cooked corned beef, be careful to not overcook it, which keeps it juicy and tender for skillet hash.
    • Corned beef is naturally salty, which is why this recipe doesn't call for salt. Of course, you can add salt to taste, if desired.
