Why You’ll Love My Chicken Thighs Recipe
When I say baked chicken thighs are one of the quickest, easiest entrees you can make, I mean it. Thigh meat is naturally juicy and flavorful because it has more fat than chicken breast. Just like my baked chicken legs recipe, that extra moisture means chicken thighs come out of the oven effortlessly juicy and tender with crisp, golden skin.
Everything happens in one pan, the prep is quick, and the results are consistently mouthwatering. You can season the thighs however you like, too, which makes this a simple, go-to chicken dinner you’ll make on repeat!
Ingredients You’ll Need
- Chicken thighs – Bone-in, skin-on thighs stay juicy and develop that irresistible crispy skin.
- Olive oil – Helps the seasoning stick; a thin brush is all you need because the skin has plenty of natural fat.
- Salt + black pepper – Simple seasonings that bring out the chicken’s natural flavor.
- Garlic powder + paprika – Add color and savory depth, but you're welcome to use any spice blend you enjoy. You'll love my quick and easy chicken seasoning recipe, too!

How to Bake Chicken Thighs
Baking chicken thighs in the oven is straightforward and beginner-friendly. Everything happens in a single dish, and the oven does the work.
First, pat the chicken completely dry with paper towels. Then place the thighs, skin-side up, in an oven-safe dish. Brush the skin lightly with olive oil, then add the seasonings. If you have time, let the thighs rest at room temperature for about 20 minutes to meld the flavors and bake them more evenly.

Next, bake the chicken thighs at 400°F for 30–45 minutes, depending on their size. They’re fully cooked at 165°F, but baking them a little longer helps the fat render and the skin crisp. If you want to speed up the crisping, switch to the broiler for 1–2 minutes and watch closely because they brown quickly.

Let the thighs rest for a few minutes before serving. That’s it. No marinating, no complicated steps, and no hovering over a stove.

How Long to Bake Chicken Thighs
Here’s the simple answer: Bake chicken thighs at 400°F for about 30–45 minutes. The exact time depends on:
- The size of the thighs. Larger thighs may take longer.
- How cold they were going into the oven.
- Your oven’s temperature consistency.
- How tightly the thighs are arranged in the pan.
Why Beginner Cooks Love Chicken Thighs
Chicken is safe at an internal temperature of 165°F, but dark meat (chicken thighs and legs) stays juicy above that temperature because it has more fat than white meat. This gives you more flexibility than the exact timing needed to prevent chicken breasts from overcooking. Thighs are naturally more forgiving and therefore great for novice cooks.

How to Get Crispy Baked Chicken Thighs
Getting crisp skin is easier than people think, and these tips will help:
- Keep the thighs skin-side up. The hot air hits the skin directly, helping it crisp.
- Give the thighs some space. Crowding traps steam and prevents browning.
- Use a hot oven. 400°F is ideal for crisp skin and juicy meat.
- Bake them past 165°F internal temp. Because dark meat stays juicy above that temperature, you can cook it longer without drying it out.
- Use the broiler if needed. A quick broil is a great way to finish the skin—keep a close eye on it.
Tips From The Test Kitchen
- Use any oven-safe pan. A baking sheet, casserole dish, or skillet all work well.
- Season however you like. Thighs are a blank canvas and taste great with simple salt and pepper or bold spice blends.
- Use a light coat of oil. The skin’s natural fat helps everything brown.
- Let them rest before serving. Let the juices settle for a few minutes.
- Check doneness with an instant-read thermometer. It’s the easiest way for beginners to feel confident.

Note about scaling
When scaling, the light gray ingredient notes after the comma don’t change. Adjust as needed.
Ingredients
- 5 Bone-In Chicken Thighs, or more as needed
- 1 teaspoon Olive Oil, or oil spray
- Salt and Black Pepper, for seasoning
- ⅛ teaspoon Garlic Powder, or measure with your heart
- ⅛ teaspoon Paprika, or measure with your heart
Instructions
- Preheat your oven to 400°F and center the oven rack. Pat the CHICKEN THIGHS dry with a paper towel. Place the thighs in an oven-safe dish or baking sheet, skin side up.
- Brush OLIVE OIL over the skin. Generously season with SALT and PEPPER, then sprinkle GARLIC POWDER and PAPRIKA evenly on top.
- If you have time, let the CHICKEN rest at room temperature for 20 minutes before baking to let flavors meld and promote even cooking. Otherwise, skip to the next step.
- Bake the chicken thighs uncovered for 30–45 minutes, depending on their size. They’re fully cooked at 165°F, but baking them a little longer helps the fat render and the skin crisp. You can also broil them for a few minutes to speed up crisping, watching closely because the skin browns quickly.
- Transfer the cooked thighs to a loosely covered plate and let them rest 5 minutes before serving.
- Cool leftovers completely. Refrigerate in an airtight container up to 5 days.

It is okay to use boneless chicken thighs? How would the recipe be altered.

Hi Marian, yes, boneless chicken thighs will work great for this recipe. You can use the same prep steps as the bone-in chicken thighs, but bake the boneless thighs for about half the time (about 20 minutes). Great question, btw!
