    Why you'll love this recipe

    Nothing says summer like tomato and burrata salad. Juicy heirloom tomatoes, fresh basil, extra virgin olive oil, and balsamic glaze are layered in minutes, making the perfect seasonal salad or appetizer.

    The gorgeous colors, textures, and flavors make this summer salad a hit for any formal or casual event. Burrata salad is the ultimate appetizer with bread or crackers, but can also be enjoyed as a colorful side for any entree.

    Burrata salad ingredients

    • Burrata - This fresh cow’s milk cheese is made with mozzarella and cream. Burrata is uniquely structured because it is a ‘pouch’ of fresh mozzarella that holds cream-soaked mozzarella curds, or stracciatella.
    • ripe tomatoes - Use cherry and heirloom tomatoes or any seasonal variety.
    • Fresh herbs - I used basil for a caprese-style salad, along with some fresh parsley.
    • Extra virgin olive oil - A little drizzle of olive oil is all you need.
    • Balsamic glaze - This adds a sweet, tangy contrast that pairs perfectly with this tomato salad.
    • Sea salt and black pepper - this brings all the flavors together

    How to make burrata salad

    Step 1. Let the burrata rest at room temperature for 30 minutes before serving to soften and remove the chill. Meanwhile, slice the tomatoes and remove the basil leaves from the stems.

    Step 2. Arrange tomatoes and burrata on a serving platter. I used a combination of heirloom tomatoes and cherry tomatoes, but any variety will work. Scatter fresh basil leaves over the surface.

    Step 3. Drizzle balsamic glaze over the surface and serve.

    Chef's serving tip

    When you cut into burrata, it oozes buttery, creamy richness that is an elegant culinary experience. However, the first cut can be intimidating to guests. So, I recommend scoring or cutting into it before serving to initiate this experience. I find that doing so invites guests to dive in and enjoy without any hesitation.

    Tips to make the best burrata salad

    • Tomato variety - When I make burrata salad, I prefer a combination of fresh heirloom tomatoes and cherry tomatoes, especially during the summer peak season, when they're extra juicy and sweet.
    • Availability - Check your grocer's specialty cheese section or a specialty grocery store for availability year-round.
    • Handling - Burrata is a delicate cheese and should be handled carefully. A large, slotted spoon is recommended when transferring.
    • Water - The water that houses burrata in the storage container can be discarded or used for other recipes.
    • Temperature - Burrata becomes creamier and more flavorful when it rests at room temperature.
    • Make the mess - It can appear messy when you break open a ball of burrata cheese. Go with it – it’s part of the experience.
    • Leftovers - Refrigerate leftover burrata salad in an airtight container up to 24 hours.

    Recipe variations

    • Add a spread to the platter from a summer spicy fig jam recipe or basil pesto.
    • Create a panzanella by adding homemade croutons and your favorite vinaigrette and serve as a salad.
    • Instead of using fresh tomatoes, try this recipe with roasted cherry tomatoes for a sweet and savory twist.

    Note about scaling

    When scaling (2x or 3x), the light gray ingredient amount doesn’t scale. Please adjust those accordingly.

    Ingredients 

    • 4 ounces Burrata Cheese, or more as desired
    • 1 pound Tomatoes, * see recipe note
    • ¼ cup Fresh Basil
    • 1 tablespoon Extra Virgin Olive Oil
    • 2 teaspoons Balsamic Glaze, or balsamic vinegar
    • pinch Sea Salt
    • pinch Black Pepper

    Instructions

    • Place BURRATA on serving platter and rest at room temperature 15 to 30 minutes to remove the chill.
    • Distribute TOMATOES around the burrata on serving platter.
    • Scatter FRESH BASIL, drizzle OLIVE OIL, and sprinkle SALT and PEPPER over the platter.
    • Use a sharp knife to score the burrata and open it just enough to expose the creamy inside.
    • Drizzle BALSAMIC GLAZE over the platter.
    • Serve with crostini, crackers, or French loaf and enjoy!
