Nothing says summer like burrata served with juicy, ripe tomatoes, fresh herbs, olive oil, and balsamic glaze. It’s the perfect way to use garden tomatoes, or any summer fruit, and is suited for both formal and casual gatherings. Just like my Peach Burrata Salad, this burrata appetizer offers colors, textures, and flavors that will wow anyone’s palate, yet it's crazy easy to make!
What is burrata?
Burrata is a fresh, cow’s milk cheese made with mozzarella and cream. It’s a uniquely structured cheese because it’s a ‘pouch’ of fresh mozzarella that holds cream-soaked mozzarella curds, or stracciatella. So, when you cut into it, it oozes buttery, creamy, richness you just won’t get from other fresh mozzarella cheese. When you serve it, you’re not just serving cheese, you’re serving an elegant culinary experience that only took 10 minutes to assemble. Winning!
Burrata and tomato salad ingredients
- burrata cheese - serve at or near room temperature
- ripe tomatoes - heirloom tomatoes or any garden variety
- fresh herbs - I used basil and parsley, but any herbs work
- extra virgin olive oil - just a drizzle is all you need
- balsamic glaze - adds a sweet, tangy contrast (find it here)
- sea salt and black pepper - this brings all the flavors together
Where to buy burrata cheese
Most conventional grocery stores carry specialty cheeses, so it's very likely you can buy burrata at your local grocer. It's always water-packed and most commonly sized as a 4oz ball(s). It's funny to think that it wasn’t that long ago that it was only available in specialty grocery stores and cheese shops.
Things to know about this cheese
- It's a delicate, fresh mozzarella and should be handled with care.
- It's packed in water, so avoid transferring any excess liquid when plating it.
- Serve at/near room temperature by setting it out 30 minutes ahead of serving because it’s creamier and more flavorful. Visit the next section for ideas on how to serve it.
- Once served, plan to eat it immediately for optimal flavor and texture.
- Since the inside of this fresh mozzarella is super creamy, it can appear a little messy once it's served. Go with it! It’s part of the experience.
- If you end up with leftovers (which you probably never will), refrigerate in an airtight container and plan to eat within 24 hours.
How to serve burrata
Burrata can be served in a whole ball or torn into pieces. Here are some pairing ideas on how to eat burrata.
- tomato caprese salad - (see recipe below) Other ideas include serving burrata appetizer on a platter with peaches, figs, or melon, garnished with fresh herbs, nuts or seeds, olive oil drizzle, vinegar, Basil Pesto, or balsamic glaze. Serve with crackers or use homemade crostini for bruschetta.
- snack - drizzle with olive oil, salt, and pepper, and serve next to a basket of sliced French Bread.
- panzanella salad - add homemade croutons and your favorite vinaigrette to this tomato platter and serve as you would any salad.
- side dish - serve whole or torn into pieces with grilled or roasted vegetables over mixed greens and an olive oil drizzle.
- charcuterie - serve whole with cured meats, nuts, crackers or crostini, and my fig jam (or any fruit preserves).
- pizza topping - add burrata cheese to your pizza (after it has baked) by tearing it into pieces and scattering over the pie.
Serving tip: When serving burrata whole (as pictured here), score the top with a sharp knife and open it just enough to expose the creamy inside. Serve with a spreading tool.

Burrata Recipe with Tomatoes
INGREDIENTS
- 4 ounces Burrata Cheese, near room temperature
- 1 pound Tomatoes, all sizes
- ¼ cup Fresh Herbs, basil and parsley
- 1 tablespoon Extra Virgin Olive Oil
- 2 teaspoons Balsamic Glaze
- pinch Sea Salt
- pinch Black Pepper
Instructions
- Let burrata sit at room temperature for 30-60 minutes to soften and remove the chill.
- Distribute TOMATOES on the serving platter.
- Scatter fresh herbs, drizzle olive oil, and sprinkle salt and pepper over the burrata and tomatoes.
- Use a sharp knife to score the burrata and open it just enough to expose the creamy inside.
- Drizzle BALSAMIC GLAZE over the platter.
- Serve burrata with crostini or French bread and enjoy!
