This easy chicken salad recipe is creamy, fresh, and perfect for sandwiches, wraps, crackers, or meal prep lunches. Rotisserie chicken makes it extra quick and flavorful, but any cooked chicken works great for this deli-style chicken salad.

1Celery Ribfinely diced (about ½ cup)
½mediumRed Onionfinely diced (about ½ cup)
⅓cupMayonnaiseor more to taste
1tablespoonLemon Juiceor vinegar
2teaspoonsDijon Mustard
Salt and Black Pepperto taste
Instructions
Add the CHICKEN, CELERY, RED ONION, MAYONNAISE, LEMON JUICE, and DIJON to a mixing bowl.
Add SALT and BLACK PEPPER to taste.
Serve immediately or refrigerate in an airtight container for up to 5 days.
