Notes
selecting cucumbers - If using the spiral slicing technique, use thin-skinned, seedless cucumbers. Otherwise, plan to peel and seed thick-skinned cucumbers for this salad.
cucumber slicing options- Slice cucumbers however you like for this cucumber salad. You'll also find instructions for the fun spiral-slicing technique as seen on TikTok.
salting cucumbers - It's not necessary for this recipe since the dressing is a liquid-base. Also, it makes this salad overly salty, even with rinsed cucumbers.
make ahead tips - The cucumber can be sliced and the salad dressing made a few days ahead. I prefer to store them separately in the refrigerator.
when to serve - Asian cucumber salad can be dressed and enjoyed immediately if you prefer firm cucumber texture. Dress 24 hours ahead if you prefer softened cucumber texture.
recipe variations - check out the substitutions for this recipe (including chili crisp).

Place cucumber between two chopsticks on a cutting board.
Use a chef's knife to make diagonal slices that measure ⅛ to ¼ inch apart, using chopsticks to prevent slicing through the entire cucumber.
Flip the cucumber over and make perpendicular slices of the same measurement.
Grab each end of the cucumber, stretch it out, and be amazed!
It's ok if the cucumber doesn't stay in one piece because, next, you'll want to cut it into 2-inch sections for easier serving.
