It’s melon season, which means it’s flippin hot outside and time for watermelon salad. I love the melon sweetness against the radish spice, and oh yeah, mint! It’s a hydrating, flavor explosion…perfect for those brutally hot days.
Summer produce inspires me…especially recipes that combine fruits and vegetables.
But…they must be done right, you know, with the right texture and flavor combination.
This watermelon salad with flecks of radish, topped with mint and tossed in a honey lemon vinaigrette…it has it all going on!
The hardest part about this salad…is dicing the watermelon into those cute little 1/2” pieces.
If that’s too much of a pain, you could always buy the pre-cut melon pieces. But, their convenience comes with a price.
Why not just grab a melon and practice your knife skills?
They’re so fun to cut because a sharp knife goes right through. It’s easier than cutting butter LOL.
You must be careful and prevent the melon from rolling when you initially cut into it. Do this by cutting off and inch or two from each end, and using either end as a base to stand it up.
As for the radishes, feel free to chop them into any bite-sized shape you like. You could even pulse them in a food processor for a few seconds, but be careful…don’t liquify them.

I also love that it only involves a little chopping, whisking, tossing, and chilling…and you’re done!
The spicy, crisp radishes against the tender, juicy watermelon, sweetened with a little honey and lemon?…what’s not to love?!

- fresh mint
- lemon juice
- salt and pepper

Watermelon Salad with Honey Lemon Dressing
- 4 cups Watermelon diced
- 1 cup Radishes chopped
- 1/4 cup fresh Mint chopped
- 2 Tbsp Lemon Juice
- 2 tsp Honey
- 1/4 tsp Kosher Salt
For the watermelon salad
- In a mixing bowl, combine WATERMELON, RADISHES, and MINT; gently toss to combine.
For the dressing
- In a separate mixing bowl, whisk together LEMON JUICE, HONEY, SALT, and PEPPER.
- When ready to serve, pour over salad, gently toss to combine; serve chilled. Store in an airtight container in the refrigerator up to two days.
