Turkey Taco Mexican Rice Skillet
You know what I love? Healthy Mexican food! Especially when it’s made in one skillet…in 30 minutes!
Know what else I love? Meal prepping a batch of something to start every week. Even if it’s just one batch of anything, we’re off to the races of another great week!
Because it means we aren’t eating convenience food (you know the kind!)
This skillet superstar is awesome because you’re knocking out the protein and the Mexican rice, all in one, swift, move.
And you can use it a zillion ways. I’ll scoop it right out of the skillet with tortilla chips and call dinner done!
Buuuuut, if we’re being civilized, we can grab a fork and eat it right out of the skillet. Boom!
Ok, for real. For the sake of meal prep, I love to make this recipe, store it in the fridge, and dish it out through the week into taco salad, burritos, enchiladas, nachos…you name it!
Here’s the rundown of simple steps for this turkey taco skillet:
- Saute onion, garlic, and ground turkey
- Add rice and saute briefly
- Add tomatoes, stock, water, and seasoning
- Boil, then simmer
- Scoop it up!
Here are the ingredients you’ll need to make it:
- olive oil
- red onion
- ground turkey
- long grain white rice (uncooked)
- canned diced tomatoes
- chicken broth
- taco seasoning

Nope. But wait!…a bean-free Mexican dish? Yea, I know, right?! It’s crazy, but not everyone can eat beans…and sometimes I like to take breaks (because I eat them A LOT!), but still crave my Mexican food.
