Vegetarian Burrito Bowls

Vegetarian Burrito Bowls - inspired by everyone's favorite Chipotle bowl. It's loaded with beans, rice, fresh produce, and Mexican toppings. It's perfect for a nutritious weekday lunch or dinner and can be meal prepped on Sunday for the busy week.

Chipotle-inspired Vegetarian Burrito Bowls are one of my favorite ways to eat a meatless meal that's packed with nutrition. It uses everyday ingredients that are budget-friendly and available all year. A little prep and planning not only keeps you from going hangry on busy weekdays, but satisfies Mexican food cravings.

Burrito bowl ingredients

I recommend knocking out these out as meal prep. When it’s time to assemble and eat these Mexican Burrito Bowls, you can reheat the beans and rice (or not), toss everything together, top with a squeeze of fresh lime or dressing and enjoy!

  • lettuce - Use iceberg, romaine, green or red leaf lettuce.
  • avocado - An essential protein in this vegetarian burrito bowl.
  • lime - A squeeze of fresh lime juice adds so much zesty flavor.
  • cilantro - Optional, but recommended if you're not a cilantro hater.
  • cooked beans - Use canned or pressure cooked black beans, pinto beans, or refried black beans will be amazing too!
  • rice - This copycat Chipotle brown rice is the best – but any rice will work.
  • salsa - use my 5-minute restaurant style salsa or fresh homemade pico de gallo
  • dressing - my avocado ranch dressing is so good on this bowl
  • cheese - shredded Mexican cheese is my personal favorite

How to make a burrito bowl

A little planning and footwork and you can meal prep a week of lunches without sacrificing your dietary goals, your time, and your budget.

  1. Prep ingredients for the burrito bowl (chop produce, make salsa, cook beans or open canned beans)
  2. Store ingredients separately until you're ready to assemble each bowl.
  3. To serve (or assemble) divide burrito bowl ingredients, top with dressing or lime squeeze, and enjoy!

What I love about homemade burrito bowls

  • you control the sodium
  • naturally gluten-free
  • nutritious and filling
  • once prepped, everyone can mix and match to customize
  • travels well for a weekday lunch

Sometimes I like to serve vegetarian burrito bowls on a sheet pan full of warmed tortilla chips!

Vegetarian Burrito Bowl Recipe

INGREDIENTS
 

  • 1 cup Cilantro Lime Rice, or plain cooked rice
  • ½ cup Cooked Beans, any kind
  • 8-10 leaves Romaine Lettuce, washed and torn
  • ½ large Avocado, diced
  • ¼ cup Salsa, or Pico de Gallo
  • ¼ cup Fresh Cilantro, loosely packed
  • ½ cup Avocado Ranch Dressing
  • 1 Lime, cut into wedges

Instructions
 

  • Place LETTUCE LEAVES into individual serving bowls.
  • Divide RICE, BEANS, AVOCADO, SALSA, CILANTRO, and LIME wedges over two bowls.
    Top with dressing, if desired.

    I agree with you, meal prep is crucial - it doesn't have to be fancy or take you hours, but it really makes a great difference to have a few items ready to be eaten or cooked! These burrito bowls sound delicious 🙂
