Become a meal magician any night of the week by turning your favorite smoked sausage into a lightened-up, skillet meal. Sun-dried tomatoes tastefully accent this dish and bring out the savory bites of sausage and veggies. This is the Magic Wand ‘Any’ Sausage Skillet Meal. It’s veg-friendly, and on the table in under 30 minutes.
A couple of weeks ago, we returned from a short camping trip and had one, lonely sausage link left in our ice chest. How’d that happen?…I don’t know, because sausages are crazy popular among hungry campers.
But, we had one left. And I needed to make dinner…fast! One link…and one bun…does not make a meal-for-two. So, I opened the fridge, waved my magic wand, and built an entire dish around this yummy wallflower.
Then I did a photo shoot…b/c, well, it was pretty. Our dinner grew cold, blah blah, food blogger problems, but you’ll be happy to know this meal heats up nicely in the microwave and tastes great on day two!
About the ANY sausage…you guys know I eat very little meat, but when I do, it (1000%) must be excellent quality and sustainable when possible. Otherwise, why bother? So I wanted to point you in two directions, depending on your dietary preferences.
First, the meat…

- Sauté veggies
- Add sausage…and more veggies

- Macaroni noodles
- Sun-dried tomatoes packed in oil
- Pre-cooked chicken, pork, vegetarian, or vegan sausage links
- Green onion
- Cherry tomatoes
- Chili pepper flakes
- Salt and pepper
- Chives (for garnish)
Tools you’ll find handy for this recipe:
- 3.5 quart stainless sauce pan to boil the macaroni
- Stainless Steel Colander to strain the macaroni
- 5-Quart Nonstick Skillet to sauté all ingredients
- Wooden Spoon or Rubber Spatula to stir
