Ingredients for berry no churn ice cream
- Strawberries and Blueberries: These add a fresh burst of sweet and tart flavors to this ice cream. And how about that irresistible purple color?
- Heavy Whipping Cream: A thick cream that becomes light and fluffy when whipped. It adds a rich, creamy texture to this very simple dessert.
- Sweetened Condensed Milk: This standard bakery pantry ingredient adds creaminess and sweetness to this ice cream, making it plenty sweet without the need to add extra sugar.
- Vanilla Extract: Extracted from vanilla beans, this adds a warm, floral aroma that enhances the sweetness of the berries.
How to make my berry ice cream step by step
Wash the strawberries and blueberries; remove stems. Puree strawberries and blueberries in a food processor or blender.
Mix this fruit puree with sweetened condensed milk and vanilla.
Whip heavy whipping cream separately until stiff peaks form. Gently fold whipped cream into fruit mix.
Pour into freezer-safe container, smooth the surface, and cover. Freeze at least 6 hours.
To serve, rest the ice cream at least 30 minutes at room temperature for optimal texture.
Recipe variations
- Add a teaspoon of lemon zest to the ice cream mixture to brighten the strawberries and blueberries.
- Whisk maple syrup into the mixture for a natural sweetness that complements the berries.
- Swap half the heavy whipping cream with Greek yogurt for a tangy twist that pairs well with the berries.
- Stir in chocolate chips or drizzle with chocolate ganache for a whole other level of satisfaction.

Ingredients
- 8 ounces Strawberries, 1 ½ cups or 225 grams
- 8 ounces Blueberries, 1 ½ cups or 225 grams
- 1 pint Heavy Whipping Cream
- 1 (14-ounce can) Sweetened Condensed Milk
- 1 teaspoon Vanilla Extract
Instructions
- Wash the STRAWBERRIES and BLUEBERRIES and remove the stems.
- Place in the food processor and blend until pureed.Note: If you prefer fruit pieces in your ice cream, stop the processor when it's coarsely chopped, remove about 1 cup, and set aside.
- In a mixing bowl, whisk together the SWEETENED CONDENSED MILK, VANILLA EXTRACT, and PUREED FRUIT until well-combined and set aside.
- In a separate mixing bowl, whip the HEAVY WHIPPING CREAM on medium-high speed until medium peaks form, about 3-4 minutes.
- Gently fold this into the fruit mixture, taking care not to deflate the cream.
- Transfer the ice cream mixture into the freezer storage container and smooth out the surface.
- Cover the container with a lid or plastic wrap and freeze on a flat surface for 6 hours, or until firm.
- To serve, rest the ice cream at least 30 minutes at room temperature for optimal texture.
Equipment
- 7-cup food processor or any blender
- electric hand mixer or whisk
- 8-cup freezer storage container with lid or standard sized loaf pan

Recipe Notes
- Make sure the heavy whipping cream is very cold before you start. This helps it whip up faster and get fluffier.
- Fold the whipped cream gently with the fruit mixture to keep the mixture light and airy.
- Tightly cover the ice cream with plastic wrap to help prevent ice crystals from forming.
- Wait at least 6 hours for the ice cream to freeze completely. I find it's easiest to leave it overnight.
- If the ice cream is too hard to scoop when serving, continue resting it as room temperature, checking it at 15-minute intervals.

This was extremely delicious. The first time I tried it, I used frozen strawberries. They were too big, and some did not break down in my Nutribullet. So we decided that next time, I should use thawed fruit.
But the consistency was VERY creamy. So creamy, that I wondered if I could make this with a lower fat whipped cream and still get good results. But I still have half a container of heavy whipping cream, so...
I used mangoes and bananas this time. Just made it, it's in the freezer now.
I think I may have rushed through it and may have de-whipped my whipped cream when I was stirring in the sweetened condensed milk. We'll see how it comes out...I'll come back and update.

I made this last night replacing the fresh fruit with a frozen 4 berry mix. After it was in the freezer overnight, we had the ice cream for dessert today. After a couple spoonfuls, I heard "mmmm" from my husband, then "mmmmm" from my son, then I went "mmmm". Needless to say we loved it! I think I'll be making it again in the near future. Just made this, absolutely delicious and hasn’t even froze yet.i just had to lick the spoon!
I usually make a custard base churned ice cream. This is so much easier and flavor is wonderful.
I did substitute frozen black cherries since it’s what I had on hand and added about 1/4 tsp of almond extract.
This will be my go to recipe for ice cream and will be trying with different types of fruit . Uhm maybe coconut pineapple?!
