02/12/2014 – Grown-Up Quesadilla
Grown-up Quesadilla with Roasted Veggies is my latest concoction inspired by a recent conversation with my mom. The other day, she told me about a fantastic food-truck experience where they loaded her veggie quesadilla…with vegetables. Sounds ironic, right?
All too often, restaurants will default to the proverbial quesadilla as a ’tortilla with cheese’. But why?…when they have all of those beautiful vegetables at their fingertips AND the ability to acquire and maintain customers with restricted diets.
If I owned a restaurant, this Grown-Up Quesadilla (or something similar) would be a menu staple. Until I do, I’m left to my own devices to fulfill this craving in my home kitchen – and you can too!
What makes this quesadilla unforgettable is that I use a boatload of healthy, organic veggies AND roast them with fresh jalapeño slices. As the vegetables roast, the oils from the peppers settle on the other veggies, imparting a subtle, spicy flavor that doesn’t punch you in the face (but first remove the peppers from the veggies before eating).
Some people think meatless food is boring. Well, if it is…it is. But this quesadilla is not.
