Garlicky Roasted Mushrooms are a juicy, delectable side dish for any cooking skill level. These oven roasted mushrooms will complete any meal with only 5-minute prep and 10-minute bake time. They're also approved for most diets, making them pretty much 'miracle food'.
Garlicky Oven Roasted Mushrooms
My favorite thing about this roasted mushroom recipe is how much flavor you get from so few ingredients and such simple steps. Oven roasted mushrooms generally need much less oil than stove sautéed mushrooms. In the oven, they baste in their natural juices, so you only need a light coating of oil, and they always come out perfectly tender and juicy.
Roasted mushrooms recipe ingredients
- mushrooms
- olive oil
- garlic cloves
- chives
- salt and pepper
- garlic powder
What's the difference between roasted mushrooms and baked mushrooms?
The words baked and roasted are often interchangeably used, but they technically have two meanings. Both methods refer to a dry-heat source in the oven, and The Kitchn explains how the temperature for roasting is actually higher than for baking, which results in a browned-exterior with moist interior. Which also means YUMMM!
These oven roasted mushrooms...
- are vegan, vegetarian, gluten free, paleo, keto, low carb, and whole 30 approved
- take 5 minutes to prep and about 10 minutes to bake
- require only a light coating of oil to bake, unlike sautéing
- are the juiciest mushrooms that literally burst with flavor
- can conveniently cook in the same oven with roast chicken, fish, and beef entrees at 400°
Roasted mushroom recipe steps
- Preheat oven to 400°.
- Add mushrooms to bowl with olive oil, fresh garlic, fresh chives, salt, and pepper.
- Toss to combine (you want the garlic to stick to the mushrooms).
- Place on baking sheet and dust mushrooms with garlic powder.
- Bake 10-12 minutes until sizzling. Serve warm.
Oven roasted mushrooms can be baked in conventional oven or countertop oven. They're perfect for any occasion and require minimal cooking skills. I'm sure you'll find them positively scrumptious, so make plenty!

Delicious 👍 loved them
Awesome! Glad to hear it...thanks for taking the time to let me know 🙂 💚
Tonight I am baking the garlic and olive oil skinless chicken thighs. I am also making the mushroom caps per your instructions. So easy and my husband keeps telling me I have become a hood cook? Wrong! I found you!!
Well I'm so happy to hear it, Arlene! Glad my recipes have found their way into your kitchen 🙂 Thanks for taking the time to let me know 💚
I love love your recipes. Chicken thighs were great and not high calorie. The mushrooms baked were very yummy. Last night I made the meatloaf with pork and veal with the sweet sauce on top. I am a bad cook and my husband nave me a kiss and a hug and said, honey, you outdid yourself. Funny because, so easy. I only like lower calorie meals because, that’s how we eat to stay slim. Thank you for your great instructions . Looking forward to many more. Arlene Wagner
I made these for the first time to serve with Prime Rib Roast for Christmas dinner, and they were fantastic! Just the right balance of flavors. They complimented the meat to a "T" and were a big hit. May have been the first time making them, but not the last.
Yayyyy, Cathy! Sounds like you love roasted mushrooms as much as we do...esp wit steak! I'm so glad to have been a part of your Christmas dinner in this way 🙂 Thanks for the review 💚
Man, I always forget how delicious roasted mushrooms are until we have them. Then I think "why are we not making these every other week?" 😂 So simple and always delicious. A no-brainer side, really!
Omgosh I feel the same way about roasted mushrooms! Glad you enjoy these as much as I do...thanks!!!
Can I use the mushroom to be stuffed ? Iremoved the stems
Thank you
Hi Rosie, you can turn these into stuffed mushrooms by stuffing them before baking them. I hope that answers your question. Let me know. Thanks! 🙂
I followed the recipe and the mushrooms turned out very nice. Only, I baked for a little longer with the lid on and I did put more garlic on the mushrooms. I liked that they are very healthy, almost no oil and low in calories in carbohydrates, but not at the expense of flavour.
Awesome! Yes, I love how roasted mushrooms pack in the flavor and not the calories. Thanks for stopping back by...glad you enjoyed 🤩
I had to see what all the hype was about with these mushrooms. Wow, it's well deserved! They are so good. Super simple to make too. We'll be making them like this regularly now. Thanks for the awesome recipe! 🙂
Thanks so much, Justin 🙂 So glad you enjoyed the recipe and thanks for letting me know...Cheers!
Yummy garlicky mushrooms! Squeezed some lime juice before eating for an added flavor.
Awesome! So glad you enjoyed! Thanks so much for letting me know 🙂
These mushrooms are fabulous! I have made them twice exactly as directed. The first batch I tasted were so good I only let my husband taste one and I finished them off all by myself 😁
Wow...love hearing this, Pam! You remind me of myself with these 😉 They never last very long at all LOL
Absolutely love your creative idea with garlicky oven roasted mushrooms! As you know I made it a short while ago and it was lovely! Thx, Traci for sharing!
Awesome Bella! I really appreciate your feedback and so glad you enjoyed them 🙂 Makes my day!
Are there any adjustments you would recommend if using a regular sheet pan rather than an iron skillet? My mushrooms are slightly larger crimni and I won't be able to fit very many on my cast iron.
Hi Kaylin...any sheet pan will do. I tend to use the iron skillet for aesthetic reasons...and the fact that I LOVE that pan LOL. But, you'll be all good with a sheet pan. Hope you enjoy it!
Is it crazy that I want to eat this entire batch of mushrooms as a meal? They look soooo amazing! All that garlic..... mmmmm..... I want to reach in and snag one! I love baked mushrooms, but haven't made any this year, YET! Thanks for the recipe!
Haha thanks Trish...not crazy at all! These mushrooms never make it to the table when we make them...they're so easy to accidentally devour! 😉
Oven roasting is great way to go! All that roasted flavor and then the garlic and chives, I'm not surprised they disappear right away. These are definitely a hit with any mushroom lovers out there. And this recipe fits in so many people's diets. Bonus!
Thanks Annemarie! Yep, mushroom lover's lovvvve roasted mushrooms. So simple...and they DO fit so many diets 🙂
Oven-roasted veggies are one of my fave things! You're bang on with the fact that you need less oil. And yet, there's still SO much flavor! (Way more flavor than frying in a pan!) These big garlicky bites are tantalizing. All that garlicky flavor soaked up in those sponge-like mushrooms... yes please!
Haha, well-said, Dana! Thanks for putting it like that b/c that's exactly how it is...esp that garlicky part. I think oven roasted mushrooms should always have it! 🙂
Oh, not only are these delicious, but that garlic imparts such a wonderful aroma in the house. BONUS. Such a yummy appetizer. I was planning them as a side dish, but everyone kept eating them off the pan and there weren't any left to serve. Thank you.
Thanks Debra...I love hearing this! These never make it to the table over here too 🙂
Oh yes...we are mushroom lovers. Garlic and mushrooms so go well together. Grilling season is just around the corner. This is the perfect side to a nice juicy steak.
Thanks Gloria! Yes, these are perfect with so many grilled or baked proteins. I'm craving them now LOL 😉
These mushrooms were wonderful! My family loves baked mushrooms but putting together a meat filling was always such a chore for me that I rarely make it. These vegan mushrooms are just as good and so easy!
Woohoo! Thanks Lynlyn...I happen to 100% agree with you 😉 Cannot go wrong with this recipe!
These mushroom will be a perfect appetizer/snack for all the home-gating we are planning on doing this football season - just delicious!

Great looking recipe and I'm super excited to see that you love your toaster oven. I'm in the market for a new one and have been looking at a Cuisinart similar to the one you linked to.
Thanks Pam...yep, we've had our Cuisinart for about 4 years and I don't think I can be swayed towards any other model. We LOVE that thing!

HOLY CRAP!!! I had an abundance of 'shrooms I needed to do something with and here you are! These came out SO GOOD!!! What a simple recipe. Problem is: I didn't make enuff - I stood @ the stove and nearly ate the entire pan. I'm the only one that likes them in my family so more for me. I didn't have any cheese to add, but it was good anyway. Thanks for this!
Sorry - cheese not needed; got my recipes mixed up with Roasted Cauliflower (LOL!) But everything else I said stands. 🙂
No worries...cheese would be great too 🙂
Well Tracey, you've just made my day...my week! I love your enthusiasm over these (and I feel the same way about them lol). So glad you found the recipe...aren't they the juiciest?! I've been known to eat a whole pan myself 😉 Thanks for taking the time to let me know you love them...yay!
Two of my favourite ingredinets, mushrooms and garlic, in one recipe. What not to love! I like how easy it is to put it together and I think it will go very well as a filling for a veggie wraps for those busy weekdays.
Thanks Sia...I'm with you on the favorites! Hope you get to try them soon!
You had me at garlicky already ! And we love mushrooms, so will give your recipe a try soon 🙂
