Black-Eyed Peas [No-Soak] Method
Sorry for the last-minute-ness guys, but no exaggeration…this recipe barely requires planning. You can make this tomorrow…or even today! (Truth is, I thought I finished posting recipes for the year…and then I got all inspired with an old, favorite recipe this morning. Bonus-post!)
This recipe uses regular, everyday ingredients, and dried black-eyed peas are available at most grocery stores.
Just how easy is this recipe?
- throw everything into a pot
- cover it
- shove it in the oven
- check it after an hour
- cook another half hour
…BOOM! You have a New Year’s Day tradition in under 2 hours…from scratch…without soaking…and no all-day crock pot!
And guys, you know that 99% of the time, I start most cooked meals with any combo of sautéed garlic, onions, carrots, or celery, but this one…it’s the 1% recipe. And it still rocks – even without those other ingredients.
What’s the best way to serve this one up?
My fav…over cornbread, rice, or quinoa with a side of sautéed greens. And it’s even better the next day!
Will black-eyed peas bring me luck this year?
Depends on how you define the word “luck”. For me, I feel luckiest when my family and I experience optimal health and wellness, many hugs, and much laughter, on any given day.
