Do you love Chipotle’s Cilantro Lime Brown Rice? Meee tooo! I can eat it as a meal in itself, or as a healthy side dish for my regularly occurring Mexican feasts. This recipe is super easy and happens to be a great way to use that batch of rice you made for Sunday’s weekly meal prep.
Cilantro Lime Brown Rice
Brown rice is part of our weekly food prep routine here at The Kitchen Girl HQ. To prepare it, we use our favorite rice steamer…so we can set it and forget it. Turns out perfect every time.
Because of this, we almost always have a few cups of cooked rice on hand to throw into salads or use as a side dish.
This 10-minute recipe converts leftover brown rice into a citrus-ey side dish for your Mexican-inspired eats. Use it in my Veggie Skillet Enchiladas recipe. I’ve done it…and it’s beautiful!
It’s also perfect all. by. itself.
What makes this rice so special? The fresh cilantro and fresh lime. Those two ingredients are the flavor-makers in all of my Mexican dishes. Trust me…you’ll want to make boatloads of this dish!
