04/04/2014 – The Kitchen Girl’s Dinner Salad
When a man says, “this is my new favorite salad” after eating it for dinner two nights in a row, it is going on The Kitchen Girl blog…STAT.
A few nights ago, I was foraging through the fridge to make dinner on the fly. When I discovered we had some leftover Pork Tenderloin and a bunch of Organic Spring Mix, I knew we were having a “dinner” salad.
So I cracked open a bottle of Trader Joe’s Orange Muskat Champagne Vinegar and whipped up a quick, creamy vinaigrette with only 5 ingredients.
Allow me to boast for a sec. The flavor of this dressing was extraordinary…and I don’t typically use champagne vinegar. Oh, but I do now! The tart and sweet balance made me “jump back, wanna kiss myself” as the late James Brown said…and I did, right after I took a few sips of it. It was good enough to drink, but then again, I can drink pickle juice…but only if it’s Kosher. I’m getting off-track here.
As the vinaigrette chilled, I started chopping and throwing things together in a bowl of salad greens…avocado, cranberries, carrot, apple, and roasted pork. I also toasted some almonds and sesame seeds under the broiler (on low) for just a few minutes, long enough to turn a golden color. You could also toast them in a skillet over medium-low heat until they become fragrant. Careful not to burn them!
Now, I made up this salad on the fly, but I would like to take a minute and praise my friends on Pinterest for the inspiration. I truly believe my kitchen creativity has flourished as a result of my Pinterest habit…even with salads. I’m a pretty decent cook, but as I work in my kitchen, I realize I have new ideas that pop out of nowhere, like the ingredients for this salad. It’s no coincidence this has been happening since I entered into a relationship with Pinterest. I love that site!
Now, back to the salad. This sweet and savory throw-together is packed with nutritious ingredients. You get color, flavor and texture that make you stop and actually pay close attention to what you’re eating. Go with it!
I do hope you’ll treat yourself to this one. If you can’t get your hands on the Trader Joe’s Vinegar, there are other brands out there, just be sure to get a Champagne vinegar. Let me know if you find another brand you like!
