Wanna know what I love to do with a little fresh produce, cooked beans, and tender brown rice? Honestly, I make several Mexican favorites with that lineup. But today, I’m inspiring you with my Meatless Burrito Bowls.
Meatless Burrito Bowls
One of the best tips I can give you about making great meals is that you plan to make great meals.
Sounds really simple, but in reality, if you don’t plan a little, you can plan on eating fast food at the last, starving minute. And if you do plan…you can rock out any busy weeknight without sacrificing your dietary goals, your time, and your budget.
Here’s how YOU can make this easy meal happen:
For TKG’s Meatless Burrito Bowls, plan on shopping ahead and prepping these items in advance. In my kitchen, these are staples:
- Cooked/canned Beans
- Cooked Rice
- Prepared Salsa
- Prepared Dressing (optional)
I recommend knocking out this easy list during your Sunday prep. Trust me, you’ll love having these ingredients on hand when you’re in the throes of your busy week!
When it’s time to assemble and eat these Mexican Burrito Bowls, you can reheat the beans and rice (or not), toss everything together, top with a squeeze of fresh lime or dressing and enjoy!
Here’s TKG’s “DIY version” of the prepared items:
Just for fun, I want to give you my super-easy recipes for each of the prepared items on the above list. Pre-made ingredients can make the whole process faster, but if you want to be in full control of your ingredients, I recommend working my Mexican recipes into your world. They’re super easy!
Replace CANNED BEANS with TKG’s No-Soak-Hands-Free Beans
Replace PLAIN COOKED RICE with TKG’s easy Cilantro-Lime Brown Rice
Replace store-bought SALSA with TKG’s 5-Minute Blender Salsa
Replace store-bought DRESSING with TKG’s very popular Avocado Ranch Dressing
A few benefits of this easy Mexican meal:
- Gluten-free…and vegan!
- Nutritious and filling
- Ingredients available any season
- Cross-utilize ingredients (breakfast burritos, nachos, etc)
- Toss together on busy weeknights at the last minute
- Eat for dinner or weekday work lunch
If Meatless Burrito Bowls land on your kitchen table, snap a quick pic and hashtag it #thekitchengirl on Instagram.
Cheers to the meatless movement…and always to our health!
