Would you believe a savory, broth-y, Italian soup can come together in about 30 minutes? This one right here?…it just does. Believe me, when you make this Italian Sausage Tomato Soup…and taste it…you’ll have a new fav in your weeknight rotation!
Italian Sausage Tomato Soup
I wrote this recipe to resemble an Italian Wedding Soup, only here, we’re not making meatballs. But weeknights were not made for rolling up meatbalss. So, we’re using whole delicious, savory Italian sausage all broken up into pieces and sautéed.
Since we’re not making meatballs, we’re totally gluten-free on this one. Now, I know this recipe has 18 ingredients, but don’t go screaming down the street. Many of them (such as dry seasonings, beans, tomatoes, and veggies)…you might already have in your cabinets.
Must I use fava beans?
I highly recommend the favas…and you can pick them up in the frozen vegetable section at most grocery stores. They add a certain color, flavor, and texture that make this soup Italian. I keep frozen Favas on hand for this reason. (but you can also use Edamame beans…and you’ll get an Italian-Asian fusion thing going on).
If you want it vegetarian, kick the sausage to the curb, sub in veggie stock and a meatless protein. When you’re eating it, you’ll be like “what meat?” It’s just that good!
