Healthy Breakfast Pizza in 30 Minutes
First, I have a question for you…
How do you feel about baking eggs, open-faced in the oven? I was really apprehensive about it until I tried it a few times…now I’m hooked!
For the breakfast pizza, my range of yolk perfection falls between one that is slightly spilling and slightly congealed. The breakfast pizza is the perfect environment for eggs to reach the happy place.
Ok, enough yolk speak for now. Just remember, when food is removed from the heat source…it still cooks for a minute or two. This is a delicate science to master, particularly with baked eggs. I encourage you to experiment.
What makes this a healthy, 30-minute breakfast pizza?
It’s not your traditional saucy, cheesy pizza pie. I use 1 piece of Trader Joe’s Whole Wheat Lavash for the crust, a good amount of vegetables, eggs, and a small amount of cheese. I also use Canadian bacon b/c it’s less fatty than regular bacon.
For the ovo-vegetarians, just omit the Canadian bacon and voila, you are in vegetarian, breakfast-pizza bliss!
As with all pizzas, you are welcome to improvise on the ingredients. I just want to give you a point of reference with my recipe below.
