And it goes pretty much like this…
- Chop veggies
- Toss in oil, salt, and pepper
- Grill ‘em
My recipe (below) calls for eggplant. I know, it gets a bad rap. But heeeyyyyy, don’t let that dissuade you. I’ve included a few, tiny, prep steps in the recipe to knock out those bitter flavors. I highly recommend doing this…because eggplant really rocks when it’s done right!
There is one tool that makes this job even easier – the Weber Grill Basket. I use it every time I grill large batches of veggies, and (bonus!) my small veggie pieces (like corn) never fall through the slots. I bought this very basket for that very reason..and it’s the perfect size for larger batches.
