Easter Egg Bacon Arugula Sandwich
Are you looking for a unique way to use up leftover Easter eggs…that isn’t egg salad? Nothing against egg salad, but behold, the texture of sliced eggs and the absence of mayonnaise will totally invite the use of other creative ingredients. As in, check out my Easter Egg Bacon Arugula Sandwich.
Let me be more specific about what this means for egg sandwiches.
Do you notice that stunning jar of jam in the picture? It’s our Peach Jalapeño Jam and it is ah-mazing on this sandwich. Heck, any jam would be good on this sandwich, but we’ll get you that recipe for our peach jam when the season rolls around again.
There’s so much awesomeness happening when you take sliced eggs, bacon, arugula, and red onions and pile them up on (my favorite) San Luis Sourdough sliced bread (or your favorite bread) with your favorite homemade jam spread all over it.
I mean, it’s the best thing since sliced bread became the best thing! And because we’re not using the traditional mayonnaise-ey egg salad, this sandwich just feels more like breakfast with a gourmet twist.
Another thing to note…if you’re vegetarian. I’m sure you already thought about substituting your favorite veggie bacon in this sandwich. Well, I’d love to hear about your favorite retail brands for meat substitutes in general. As always, feel free to comment below.
And, while I do like my Applewood Smoked Uncured bacon from time to time, among my recipes, several are vegetarian and vegan because I’m one of those 80/20 vegetarians with a very plant-centered diet. Who else does this?
