If you’re anything like me, you never stop searching for new, easy ways to whip boneless, skinless, chicken breast into a meal. And you probably want to keep things on the fresh side, right?
This fajita salad is such a solution to the “what’s for dinner” question here at TKG HQ. I mean, we’re talking about lightly cooked proteins, lots of vegetables, and the other thoughtful ingredients that offer interesting texture and contrast. This recipe definitely has it alllll going on…and it clocks under 30 minutes. For the win!
How easy it is to make Chicken Fajita Tex Mex Salad Bowl?
Oh man, it couldn’t be easier! You literally slice the chicken, chop the vegetables, sauté the chicken, sauté the vegetables, allow them to cool down, toss everything together into a bowl of romaine lettuce, and garnish with various toppings. That’s it. The hardest part might be cutting/preparing the chicken breast, but only if you are using a dull knife. So friend, don’t do that.

This salad is so good exactly as it is, but you could easily add some more traditional Mexican ingredients to it, like cilantro, salsa, or fresh, thinly sliced jalapeños…the sky’s the limit!
